cheap breakfast recipes to
exterminate morning hunger

Breakfast is important, but trying to haul yourself out of a comfortable bed in the morning to eat some can be a monster chore, let alone actually preparing it! But having some quick and easy cereal whipped up ahead of time can not only save you time, but also the high cost, of store bought brands. Some recipes to quash those morning hunger pangs:

Muesli
Makes: 11 Cups

Ingredients:
6 cups oats
1 ½ cups wheat germ
1 ½ cups all bran cereal
½ cup flaked coconut
1 ½ cups honey
½ cup chopped walnuts
½ cup chopped dried apricots

Directions:
1. Preheat oven to 275°.
2. Grease 2 baking pans approximately 13 x 9 x 2" in size.
3. Mix together oats, wheat germ, cereal and coconut.
4. Bake for 20 minutes, stirring once.
5. Heat honey until thin and then pour over mixture, stirring until coated.
6. Bake for another 20 to 30 minutes, stirring every 10 minutes.
7. Mix in nuts and apricots. Cool, stirring occasionally. Store in airtight container.


"Monsters Bowl"Granola

Makes: 9 Cups

Ingredients:
6 cup rolled oats
1 cup chopped nuts
1 cup wheat germ
½ tsp cinnamon
¼ tsp salt
¾ cup honey (or honey mixed with maple syrup)
1/3 cup oil, any kind
1 tsp vanilla
1 cup dried fruit, optional

Directions:
1. Preheat the oven to 300 degrees.
2. Combine oats, nuts, wheat germ, cinnamon, and salt.
3. Warm the honey, add the oil and vanilla.
4. Drizzle the honey-oil over the dry ingredients and toss to coat.
5. Spread the mixture onto 2 cookie sheets.
6. Bake about 30 minutes until golden, stirring every 10 minutes.
7. Remove from oven and stir in dried fruit if used. Let cool so that the granola gains its crunch.


Crunchy Breakfast Cereal

Makes: 16 Cups

Ingredients:
6 cups oats
2 cups whole wheat flour
2 cups packed brown sugar
2 cups flaked coconut
1 ½ cup chopped pecans
1 cup wheat germ
1 cup all bran cereal
¾ cup oil
¾ cup water
2 tbsp vanilla
1 tsp salt
1 cup raisins

Directions:
1. Preheat oven to 275°. Grease 2 jelly roll pans, approx. 15x10x1" in size.
2. Mix together oats, flour, sugar, coconut, pecans, wheat germ and all bran in a large bowl.
3. Stir in oil, water, vanilla and salt in a small separate bowl. Pour over oat mixture and toss to coat.
4. Divide mixture among pans

Bake 1 hour, stirring every 10 minutes.
6. Stir in raisins and let cool. Store in airtight container.


Kamut Breakfast

Ingredients:
2 cups Kamut (cooked according to package directions)
1 cup basmati rice
½ cups raisins
1 tsp. vanilla
1 tsp. cinnamon
Brown sugar to taste

Directions:
1. Mix together and serve. You may use ½ rice milk and ½ water to cook it.


Bowls-a-Plenty Granola

Makes: 12 Cups

Ingredients:
5 cup rolled oats
1 cup each of chopped almonds, sesame seeds, sunflower seeds, shredded
coconut, soy flour, powdered milk (preferably non-instant), and wheat germ.
1 cup warmed honey
1 cup oil, any kind

Directions:
1. Preheat the oven to 300 degrees.
2. Combine dry ingredients.
3. Combine honey and oil and drizzle over the dry ingredients
tossing and coating.
4. Spread the mixture on 2 cookie sheets and bake for 30 to 45
minutes until golden.
