Quick & Simple:

Soups to Thaw the Winter Chill

 

If you’re still trying to thaw from this year’s blustery winter, take comfort in the fact that the first day of spring is less than a month away. In the meantime, to help you make it through the short, but all-too-long month of February, we’ve included some quick, cheap and easy soups that you and your roommates are bound to warm up to.


Meaty:

Quick Italian Soup

Chicken Soup

30 Minute Chili

 

Vegetarian:

Crazy Mixed-Up Carrot Soup

Golden Potato Soup

Presto Tomato-Macaroni Soup

Cheap 'n Easy Bean and Hominy Stew

 

 

Meaty:

Quick Italian Soup
Ingredients
1 lb. ground beef
1 medium onion -- chopped
1 package Hamburger Helper (or equivalent no-name brand) mix for Lasagne
5 cups water
1 can (or frozen equivalent) whole-kernel corn, (8-1/4 oz.)
1 can diced tomatoes, (16 oz.)
1 small zucchini - sliced
2 tblsp. grated Parmesan cheese (optional)

Preparation
Brown ground beef and onion in a 4-5 qt saucepan; drain.
Stir in Sauce Mix, water, corn (with liquid), tomatoes (with liquid), and cheese. Heat to boiling, stirrings constantly. Reduce heat. Cover and simmer, stirring occasionally for 10 minutes.
Stir in noodles from the Hamburger Helper and zucchini. Cover and cook 10 minutes longer.
Sprinkle each serving with grated Parmesan cheese if desired.

Yield: 9-1/2 cups


Chicken Soup

Ingredients
2 - 14 ½ oz cans chicken broth
1/8 tsp. ground black pepper
2 large carrots -- diced
2 celery stalks -- diced
2 skinless, boneless chicken-breast halves
1 tblsp. Cooking oil
1 small onion -- chopped

Preparation
In a 4-quart saucepan, heat up oil. Add onion and cook until tender and lightly browned, about 5 minutes, stirring occasionally. Add carrots, celery, chicken broth, pepper and 3 cups water. Heat to boiling over high heat. Add chicken to saucepan and reduce heat to low. Cover saucepan and simmer 8 to 10 minutes, until chicken just loses its pink colour throughout and carrots and celery are tender. Remove saucepan from heat. Using slotted spoon or tongs, remove chicken from saucepan to plate; cool slightly until easy to handle. With fingers, pull chicken into shreds. Return chicken to soup and heat thoroughly.

Cooking time: 50 minutes


30 Minute Chili
Ingredients
Hot pepper sauce to taste
1 tblsp. chili powder (or to taste)
1 lb. ground beef
1 can kidney beans (12 oz.)
1 large onion -- chopped
1 tsp. salt
1 can tomato soup -- undiluted

Preparation
Brown the meat in a pan for about 10 minutes. (If the meat is frozen, cook longer.)
Add all other ingredients and let simmer for 30 minutes. Your choice of hot sauce may be added to taste.

 


Vegetarian:

Crazy Mixed-Up Carrot Soup
Ingredients
1-1/2 cups cooked carrots -- diced
1/2-cup milk
1/2-cup cream
1-cup chicken broth
1/2 small onion -- chopped
1 dash nutmeg
1 dash cinnamon
1 tblsp. brown sugar

Preparation
Use regular or hand-held blender to purée all ingredients.
Pour mixture into saucepan and heat well.

Yield: 4 servings


Golden Potato Soup

Ingredients
1 lb. potatoes -- cubed
1 large carrot -- diced
1 large onion -- chopped
2 cups chicken broth (divided use)
1/2-cup milk
1 tsp. white Worcestershire sauce (optional)
Salt and pepper to taste

Preparation -- Microwave Directions
Place potatoes, carrot, onion and 1/2 cup broth in a 2-quart microweavable bowl. Cover with plastic wrap, venting sprout area. Stirring halfway through, microwave on high for 8 minutes, or until vegetables are tender.
Use a blender to purée mixture with remaining broth, milk and Worcestershire sauce. Add salt and pepper.
Microwave on high 2 minutes or until heated to desired temperature.

Yield: 1 generous quart


Presto Tomato-Macaroni Soup

Ingredients
1-cup macaroni
1 can Tomato soup (8 oz.)
Sea salt pepper
Parmesan cheese (optional)

Preparation
Cook macaroni in boiling water for 8 minutes, or until tender.
While pasta is cooking, heat up Tomato soup in a 4 -5 qt saucepan.
When pasta is done, drain it well and stir it in the tomato soup.

Optional: Grate on Parmesan cheese as a garnish


Cheap 'n Easy Bean and Hominy Stew

Ingredients
1 can hominy
1 can pinto beans
1 can garbanzo beans
1 can kidney beans
6 oz. tomato sauce
1 package chili/taco/mexican seasoning

Preparation
Mix and heat. As easy as that!
